Homemade Sausage Mix

Ingredients
  Minced pork 4 1⁄2 Pound
  Bacon fat 1⁄4 Pound, minced
  Sage/Thyme 15 Milliliter (1 Tablespoon)
  Savory 2 Teaspoon
  Dry mustard 2 Teaspoon
  Salt 5 Teaspoon
  Ground black pepper 15 Milliliter (1 Tablespoon)
Directions

Blend the ground pork and bacon very thoroughly with the remaining ingredients.
Using a floured board or one dusted with corn meal, form mixture into 2 or 3 rolls.
Wrap each in foil or cheesecloth and store in refrigerator.
This Sausage meat will keep for 1 1/2 to 2 weeks.
To cook: Slice and pan fry.
