Dressed Loin Of Pork Roast

Ingredients
  Loin pork 4 1⁄2 Pound (2 Kilogram)
  Soft bread crumbs 2 1⁄2 Cup (40 tbs) (625 Milliliter)
  Chopped onion 30 Milliliter (2 Tablespoon)
  Grated apple 1 Cup (16 tbs), chopped celery (250 Milliliter)
  Salt 1⁄2 Teaspoon (2 Milliliter)
  Savory/Sage 2 Teaspoon (10 Milliliter)
  Milk/Vegetable juice 75 Milliliter (1/3 Cup)
  Water 125 Milliliter (0.5 Cup)
Directions

Have the butcher crack the back bones of the roast.
Slice the meat to the bone at intervals down the length of the piece.
Combine bread crumbs and remaining ingredients to make a moist dressing.
Press some of this mixture into each of the cuts made in the meat.
Tie string around roast lengthwise.
Place on rack in open roasting pan and pour water in the bottom.
If desired, brush meat with prepared mustard or ketchup for extra flavor.
Roast at 325F (160C) for about 2 hours, or until the exposed meat slices are thoroughly cooked but still moist.
