Mango-Ginger Popsicles

The sweetness of the mango pairs perfectly with the spicy ginger syrup. Mango-Ginger Popsicles are a refreshing treat during those summer months.
  Water 1⁄2 Cup (8 tbs)
  Sugar 1⁄3 Cup (5.33 tbs)
  Thin ginger slice 1
  Mangoes 2 Large, peeled and chopped
  Lime juice 2 Tablespoon
  Strawberries 4 , thinly sliced (If Using A Instant Ice-Pop Maker)

1. Add water, sugar and ginger slice into a sauce pan over medium-high heat until the sugar dissolves, about 5 minutes. Allow for ginger simple syrup to come to room temperature.
2. In a blender add in the mangos, simple syrup and lime juice, puree until smooth.
3. If using an instant ice pop maker, add the strawberries to the side and then the mango mixture and wait for 10 minutes for the pops to freeze.
4. If using a traditional mold, pour mixture into mold and freeze for 1 hour then add in the stick and freeze for at least another 2 hours.

5. Unmold and Enjoy!

This recipe can be altered in many different ways.
Substitute any fruit, instead of ginger use lemon or lime peel.
