Pommes Au Lard

Ingredients
  Potatoes 1 1⁄2 Pound (750 Grams)
  Bacon rashers 4 Ounce (100 Grams)
  Onion 4 Ounce, chopped (100 Grams)
  Stock 1 Cup (16 tbs)
Directions

MAKING
1) Peel and quarter the potatoes.
2) Dice the bacon.
3) In a pan, add the potatoes, bacon and onion.
4) Add enough stock to just cover the potatoes and season to taste.
5) Allow to gently simmer till the potatoes are tender.

SERVING
6) Garnish with chopped parsley.
