1) Preheat oven to 400°F (200°C), Gas Mark 6.
2) Grease a baking tin and place aside.
3) On the greased tin, pipe the potato to make the shape of cottage loaves.
4) In each of the shape, make a shallow well using your thumb at the center.
5) Place chopped tomatoes in the shallow wells.
6) Brush the potato with melted butter and place inside oven to bake for 8-10 minutes.
7) Serve the preparation hot, by garnishing with grated parmesan cheese, if desired.
