1) Boil water with sugar and vanilla until sugar dissolves and then poach in the apples.
2) Remove from heat and drain.
3) Blend chocolate with butter and dip the apples in the chocolate sauce.
4) In large champagne glasses, scoop ice cream, top with apple half, and serve with chocolate sauce.
