Pomfret A La Portugaise

Ingredients
  Pomfret 500 Gram
  Tomatoes 225 Gram
  Mushrooms 55 Gram
  Breadcrumbs 30 Gram
  Butter 30 Gram
  Shallots/Onions 115 Gram
  Cheese 15 Gram
  Lime 1
  Salt 10 Gram
  Pepper To Taste
Directions

1. Fillet the fish and skin, wash in several rinses of cold water.
2. Skin the tomatoes and slice them.
3. Saute shallots or onions and mushrooms in butter.
4. Grease pyrex dishes and line the bottom with thinly sliced tomatoes.
5. Place one layer of fillet of fish on top, sprinkle with salt, pepper and lemon.
6. Spread mushrooms and onions.
7. Repeat in layers till dish is full and the top layer is tomatoes.
8. Sprinkle breadcrumbs and grated cheese.
9. Dot with butter and bake in a moderate oven for 30 minutes.
10. If not sufficiently brown finish under a grill.
