Sevilla Tapas Salad

Ingredients
  Ripe plum tomatoes 1 Pound, cored, seeded and diced
  Red onion 1⁄2 , finely diced
  Small capers 1⁄4 Cup (4 tbs), drained
  Extra virgin olive oil 2 Tablespoon
  Coarsely ground black pepper 1⁄4 Teaspoon
  Salt To Taste
  Chopped flat leaf parsley 2 Tablespoon
Directions

MAKING
1) In a bowl, combine the tomatoes, onion, capers, oil, and pepper.
2) Season with salt and add parsley.
3) With a fork, toss gently.

SERVING
4) Serve within 1 hour, in a decorative salad plate.
