|Corn flour||4 Tablespoon|
|Cinnamon stick||1 Small|
|Cold water||1 1⁄2 Pint|
|Lemon rind||1 Teaspoon|
Boil the fruit with water, spices and sugar to taste.
Put through a sieve and return to heat.
Thicken with cornflour first blended with water, cooking gently for 7 minutes to cook the flour.
Blend in butter and pour into wet mould.
When set, unmould and serve with cream or custard.
