Plum Good Pork
|Boneless pork||1 Pound, cut into thin stir fry strips|
|Vegetable oil||2 Teaspoon, divided|
|Grated ginger||1 Tablespoon|
|Red bell pepper||1⁄2 , cut into 1 inch squares|
|Green bell pepper||1⁄2 , cut into 1 inch squares|
|Mushrooms||1 Cup (16 tbs), sliced|
|Plums||6 , seeded and cut into halves|
|Peach nectar||1 Cup (16 tbs)|
|Lime juice||1⁄3 Cup (5.33 tbs)|
|Soy sauce||2 Tablespoon|
|Ground cinnamon||1⁄4 Teaspoon|
|Dry mustard||1⁄2 Teaspoon|
|Freshly grated orange peel||1 Teaspoon|
Heat 1 teaspoon oil over high heat in nonstick skillet; stir-fry pork strips with ginger about 3 minutes.
Remove from skillet.
Heat remaining 1 teaspoon oil in skillet; stir-fry peppers and mushrooms 3 minutes.
Add plums and stir-fry 2 minutes.
Combine remaining ingredients well; add to skillet with pork.
Cook and stir until sauce bubbles and thickens.
