Plums In Parchment
|Plums||8 Large, cut into fourths|
|Packed brown sugar||1⁄4 Cup (4 tbs)|
|Chopped pecans||1⁄4 Cup (4 tbs)|
|Ground cinnamon||1⁄2 Teaspoon|
1. Place 1 teaspoon margarine on half of each parchment circle. Arrange 8 plum pieces on margarine on each circle. Mix remaining ingredients; sprinkle over plums. Fold other half of circle over plum; mixture.
2. Beginning at one end of semicircle, roll edge up tightly 2 or 3 times to seal. Twist each end several times to secure. Arrange packets in circle in microwave.
3. Microwave on high 8 to 10 minutes, rearranging packets after 5 minutes, until plums are tender.
4. Place each packet on plate. To serve, cut a large X shape on top of each packet; fold back corners. Serve warm with ice cream if desired.
