Creamy Plum Dessert
|Sugar||1⁄3 Cup (5.33 tbs)|
|Cornstarch||1⁄4 Cup (4 tbs)|
|Milk||2 Cup (32 tbs)|
|Plums||16 Ounce, pitted, cut in 1/2-inch pieces (canned, drained)|
|Vanilla extract||1 Teaspoon|
|Almond extract||1⁄8 Teaspoon|
1. In a 2-quart glass bowl, combine sugar, cornstarch, and salt. Gradually add milk, stirring until completely smooth. Microwave, uncovered, at Time Cook (power level 7) for 6 to 8 minutes, or until bubbly and thickened, stirring 3 times. In a separate bowl, beat egg yolks with about 2/3 cup of the hot pudding mixture. Quickly stir warmed egg yolks into bowl containing remaining pudding. Microwave, uncovered, at Time Cook (power level 7) for 2 minutes, or until mixture thickens enough to coat a spoon, stirring every minute. Fold in plums and extracts. Let cool slightly.
2. In a very clean 2-quart bowl, beat reserved egg whites until fairly stiff peaks form. Fold egg whites into custard. Chill for several hours before serving.
