Pizza With Toppings

|Tomato sauce||1 Cup (16 tbs)|
|Mozzarella cheese||1 Cup (16 tbs)|
|Steamed broccoli||1 Cup (16 tbs)|
|Pineapple||1 Cup (16 tbs)|
|Shredded cheese||1 Cup (16 tbs)|
|Veggie pepperoni||1 Tablespoon|
|Olives||1 Cup (16 tbs)|
|Mushrooms||1⁄2 Cup (8 tbs)|
|Pizza dough||1 Large|
|Goat cheese||6 Ounce|
|Toasted pine nuts||1⁄2 Cup (8 tbs)|
|Olive oil||1 Cup (16 tbs)|
Sprinkle 1 package of active dry yeast in a half a cup of warm water. Let it sit for 5 minutes.
In a Cuisinart, put in flour and salt. Pulse. Add olive oil, yeast, and another 1 ½ cups of room temperature water. Pour the water in slowly while the Cuisinart is on. Stop blending when the dough binds. If it is too moist add more flour, if it is too dry add a little more water.
Knead the dough on a floured surface into a ball.
Place the dough ball into a well-oiled bowl. Seal with plastic wrap or foil. Make sure the seal is tight to keep the dough moist.
Let it sit for 2 hours. It should double in size.
On a well-floured surface, shape your dough by using your hands, into pizzas. Place them on parchment paper until you are ready to use. The pizza can keep in your refrigerator overnight or in an airtight freezer bag for a month.
For the pizza playdate, I put a kid’s size pizza crust on a piece of parchment paper and then put out the toppings with spoons or pastry brushes for the kids to apply.
Keep the pizzas on the parchment paper and put them on baking sheets or pizza stones and place in an oven at 450 degrees for 10 minutes. Serve when the crust is lightly golden and the cheese is melted.
Caramelized Onions, Goat Cheese and Pine Nut Pizza:
In a small frying pan, heat up 1/2 a cup of pine nuts. When they start to brown add a pinch of salt and then set aside.
Put 1 tablespoon of olive oil in a medium frying pan. Add the sliced onions and then add 1 tablespoon of sugar. Stir and heat up until the sugar and the onions become golden and caramelized.
Brush the top of the pizza dough with a small amount of olive oil. Layer the onions on evenly and then top with the goat cheese Bake for 20 minutes at 450 either on a pizza stone or a cookie sheet until the crust is light golden. Sprinkle with the pine nuts.
Top a large pizza dough with some tomato sauce and then put on some slices of fresh mozzarella cheese. Bake for 10-15 minutes at 450 degrees. Top with basil.
