BBQ Chicken Pizza with Cauliflower Crust!

A really easy...REALLY EASY, gluten free pizza recipe with a cauliflower crust. This crust can be made in minutes!

Ingredients

For crust
Cauliflower head 1 Medium
Eggs 1
Grated mozzarella cheese 1/2 Cup (8 tbs) (or any other cheese)
Salt and pepper To Taste
Mexican oregano 1 Teaspoon
Non stick cooking spray 1/2 Teaspoon (for greasing)
For topping
Bbq sauce 2 Tablespoon (or or less to taste)
Low sodium cheese 2 Tablespoon (mozzarella cheese)
Portobello mushrooms 30 Gram , slice (baby mushrooms used)
Tomato 1 Medium , slice
Onion 1/2 Small , slice
Roasted chicken meat 1 Cup (16 tbs) (more or less)
Mexican oregano To Taste
Cilantro 1 Teaspoon , finely chopped

Directions

GETTING READY

1. Cut cauliflower into florets and cook it in microwave on HIGH for 8 minutes.

2. On a clean tea cloth, lay the cooked cauliflower, roll and twist to remove the moisture. Allow it to cool.

3. Lay parchment paper on pizza peel and grease it with cooking spray.

4. Preheat grill with pizza stone to 425- 430 degree F.

MAKING

5. In food processor add cooked cauliflower and blend.

6. Blend constantly and add egg, mozzarella, salt, pepper, and oregano to it.

7. On greased parchment paper, put the crust mixture and spread it into a thin circle as shown in the video. Cut and remove the excess parchment paper.

8. Place the crust on the pizza stone. Cover and cook for about 15 minutes or until it starts to get brown.

9. Remove the crust from oven and top it with BBQ sauce, mozzarella cheese, mushroom slices, tomato, onion, and chicken.

10. Sprinkle oregano and put it back on the grill at 450 degree F. Cover and cook until cheese melts.

SERVING

11. Garnish with fresh cilantro, cut into wedges and serve hot.
