Ingredients
  Rice dough pizza crust 1 Medium
  Sundried tomato pesto 1 Cup (16 tbs)
  Spinach 1 Cup (16 tbs)
  Arugula leaves 1 Cup (16 tbs)
  Red onion 1 Tablespoon, sliced
  Olives 1 Tablespoon
  Pine nuts 1 Teaspoon
  Lemon juice 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Cracked black pepper 1⁄2 Teaspoon
  Olive oil 1⁄2 Teaspoon
Directions

GETTING READY
1. Preheat the oven to 375 degrees F

MAKING
2. Roll out the rice dough pizza crust. Spread the pesto on top and pop it into the oven for 15 minutes.
3. While the pizza is being baked, combine spinach and arugula greens in a big bowl.
4. Add sliced red onion, (you could also use scallions), olives and pine nuts.
5. Drizzle olive oil, lemon juice and season with salt and pepper. Toss well.
6. Once the pizza is ready, spread the salad over the pizza.

SERVING
7. Cut into wedges and serve warm.
