Pizza Napoletana

Ingredients
  Pizza dough 1 , grated mature cheddar
  Tomatoes 8 Medium, blanched, skinned and chopped
  Freshly ground black pepper To Taste
  Thin mozzarella cheese slices 8
  Anchovy fillets 8
  Black olives 6 , halved and pitted
  Chopped fresh oregano 1 Teaspoon
  Chopped fresh basil 1 Teaspoon
  Olive oil 2 Teaspoon
  Salt To Taste
Directions

Preheat the oven to 450°F (230°C).
Lightly grease a large baking sheet.
Put the two pizza dough circles on the sheet.
Put half the tomatoes on each pizza and sprinkle with a little salt and lots of black pepper.
Put 4 slices of mozzarella cheese on each pizza and garnish with the anchovies and olives.
Sprinkle over the herbs and moisten with the olive oil.
Bake the pizzas for about 20 minutes or until the cheese has melted and is bubbling.
Serve hot or cold.
