Mushroom and Spinach Pizza
|Olive oil||6 Tablespoon|
|Chestnut mushrooms||8 Ounce, trimmed and sliced (225 Gram)|
|Spinach leaves||4 Ounce (Tender Young Variety, 100 Gram)|
|Sun dried tomato paste||4 Tablespoon|
|Buffalo mozzarella balls||8 Ounce, cut into cubes or torn into pieces (2 X 100 Gram / 4 Ounce)|
1. Heat oven to 180C/160C fan/gas 4. Heat a frying pan and then add 2 tbsp of the oil. Tip in the mushrooms, season to taste and saute for a few mins until just tender, then add the spinach and allow it to just wilt down; this should only take a minute or so.
2. Meanwhile, split the soda farls in half and place on a baking sheet. Place the sun-dried tomato paste in a bowl and stir in the remaining olive oil. Spread over the cut side of the soda farls, then sprinkle with the mushroom and spinach mixture.
3. Scatter the mozzarella pieces over the top and bake in the oven for 8-10 mins until the soda farls are heated through and the mozzarella is melted. Cut each pizza in half and arrange on warmed plates to serve.
