Antipasto Mini Pizzas
|Canned tomatoes||14 1⁄2 Ounce (1 3/4 Cups, Contadina Pasta Ready Chunky)|
|Canned water packed artichoke hearts||4 Ounce, drained and coarsely chopped (3/4 Cup)|
|Canned sliced ripe olives||2 Ounce, drained (1/2 Cup)|
|Chopped green bell pepper||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||2 Tablespoon|
|Plain bagels||8 , lightly toasted, each half cut crosswise into 2 pieces|
|Shredded mozzarella cheese||4 Ounce (1 Cup)|
In medium bowl, combine tomatoes, artichoke hearts, olives, bell pepper and Parmesan cheese.
Place bagel pieces, cut-side up, on cookie sheets.
Spoon about 1 tablespoon vegetable mixture onto each bagel piece.
Sprinkle mozzarella cheese evenly over vegetable mixture.
Bake in preheated 400°F oven 6 to 8 minutes or until heated through.
