Crumpet Pizzas

Ingredients
  Oil 2 Teaspoon
  Onion 1 Small, sliced
  Garlic 1 Clove (5 gm), chopped
  Button mushrooms 2 Ounce, sliced (50 Gram)
  Dried oregano 1⁄4 Teaspoon
  Crumpets 4
  Anchovy paste 2 Teaspoon
  Cooked ham 2 Ounce, cut into strips (50 Gram)
  Cheddar cheese 3 Ounce, grated (75 Gram)
  Tomato strips 8 (For Garnish)
  Herb sprigs 4 (For Garnish)
  Salt To Taste
  Pepper To Taste
Directions

1. Heat the oil in a pan, add the onion and garlic and fry for 3-4 minutes. Add the mushrooms and cook for 2-3 minutes. Stir in the oregano, and salt and pepper.
2. Toast one side of the crumpets. Spread the untoasted sides with the anchovy puree, cover with the mushroom mixture, then top with the ham. Sprinkle with the cheese.
3. Return to the broiler for 2-3 minutes, until the cheese is bubbling and beginning to brown. Top each crumpet with tomato strips and herb sprigs. Serve immediately.
