Independence Day Pizzas
|Yellow bell pepper||1 Small, stemmed, seeded, and thinly sliced|
|Thinly sliced onion||1⁄2 Cup (8 tbs)|
|Shredded swiss cheese||2 Cup (32 tbs)|
|Anaheim chili||1 Small, stemmed, seeded, and thinly sliced (California Green Chili)|
Split English muffins in half and lay, cut side up, on a 12- by 15-inch baking sheet.
Broil 4 to 6 inches from heat until lightly toasted, then turn muffins over and toast other side, about 4 minutes total.
Next, with cut sides up, evenly cover each half with bell pepper, onion, cheese, and chili.
Return to broiler until cheese melts, about 4 minutes.
