Individual Pesto Pizzas
|Lightly packed basil||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm)|
|Torn spinach||2 Cup (32 tbs)|
|Grated parmesan cheese||2 Tablespoon|
|Lemon juice||2 Teaspoon|
|Whole wheat english muffins||2 , split and toasted|
|Canadian bacon slice||2 , cut into julienne strips|
|Shredded non fat mozzarella cheese||3⁄4 Ounce (3 Tablespoon)|
|Sliced green onions||2 Teaspoon|
Position knife blade in food processor bowl; drop basil and garlic through food chute with processor running, and process 15 seconds or until minced.
Add spinach, Parmesan cheese, and lemon juice; process 30 seconds or until smooth, scraping sides of processor bowl once.
Spread spinach mixture evenly over English muffin halves.
Divide Canadian bacon strips evenly among muffin halves.
Broil 5 1/2 inches from heat (with electric oven door partially opened) 1 minute.
Sprinkle evenly with mozzarella cheese; broil an additional minute or until cheese melts.
Sprinkle with green onions.
