Mini Pizzas

Ingredients
  Whole wheat bread slices/White bread slices 6
  Olive oil 1 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Plum tomatoes 2 Medium, cut crosswise into 12 slices
  Minced fresh basil/2 teaspoons dried basil 2 Tablespoon, crumbled
  Dried oregano 1⁄2 Teaspoon, crumbled
  Salt 1⁄4 Teaspoon (Or To Taste)
  Black pepper 1⁄4 Teaspoon (Or To Taste)
  Part skim mozzarella cheese 4 Ounce (1 Cup)
  Grated parmesan cheese 1 Tablespoon
Directions

1 Preheat the oven to 425° F.
Usinga 2-inch biscuit cutter or small glass, cut 2 rounds from each slice of bread.
With a rolling pin, gently flatten the rounds.
In a small bowl, combine the oil and garlic.
Usinga pastry brush, coat each bread round with a little of the mixture.
Arrange the rounds on a baking sheet and bake for 5 minutes or until slightly crisp.
2 On each round of bread, layera slice of tomato, a sprinklingof basil,oregano, salt and pepper, a heaping tablespoon of mozzarella cheese, and 1/4 teaspoon Parmesan cheese.
Bake the mini pizzas for 7 to 10 minutes or until the mozzarella cheese is melted.
Transfer the pizzas to a serving dish and garnish with sprigs of fresh herbs if desired.
