Wholemeal Anchovy Pizza
|Whole meal bread dough||1⁄2 Pound|
|Fatty bacon slices||3 , rind removed and chopped|
|Canned tomatoes||7 Ounce, chopped (Half 14 Ounce Can)|
|Dried onion||1 Tablespoon|
|Dried oregano||1 Teaspoon|
|Mixed herbs||1 Teaspoon|
|Mushrooms||1⁄2 Cup (8 tbs)|
|Tomato paste||1 1⁄2 Tablespoon|
|Grated parmesan cheese||3⁄4 Cup (12 tbs)|
|Canned anchovy fillets||1 3⁄4 Ounce, drained (1 Can)|
|Ripe olives||5 , drained (1 Can)|
1 Roll out the dough to fit a 25cm/10 inch plate.
2 Put the dough on a greased plate and leave in a warm place covered with a warm, damp tea (dish) towel until it has doubled in size (about 30 minutes).
3 Microwave risen dough on full power for 3 1/2 minutes.
4 To prepare the filling: place bacon on a side plate and microwave on full power for 2 minutes. Drain off the fat.
5 Mix together the tomatoes, bacon, onion, herbs, mushrooms, tomato puree (paste) and salt and pepper.
6 Spread the filling over the risen dough and microwave on full power for 1 1/2 minutes.
7 Sprinkle the cheese over the pizza and garnish with olives and anchovies. Microwave on full power for 2 minutes. Serve hot or cold.
