|Whole-wheat flour||1⁄2 Cup (8 tbs)|
|Dry yeast||1⁄2 Teaspoon|
|Peanut oil||1⁄4 Cup (4 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
Soften yeast in three tablespoons of warm milk, about 85°.
Let stand for 5 minutes, then mix in salt, oil, milk, and flour, beating with an electric mixer at low speed for one minute.
Add enough flour to make a soft dough.
Turn onto a lightly floured board and knead until smooth and elastic, about 10 minutes.
Place mixture in a greased bowl, turning dough to coat lightly with grease.
Cover and let rise in a warm place until double in bulk, about 45 minutes.
Punch dough down and divide into halves.
Press dough into 2 greased 12-inch pans, forming rim.
Use fingers to spread dough over the pan to about one-fourth inch thickness.
Cover pizza with 1 cup of onions that have been sauteed in 1/4 c oil, tomato sauce, and 1 t basil.
Place anchovy fillets, mushrooms, olives, and peppers over onion mixture and sprinkle with grated Mozzarella or Jack cheese.
Bake in 400° oven for 20 minutes.
Substitute other ingredients, experimenting with cooked aduki beans carrots, zucchini, cauliflower, and different sauces, especially Bechamel Sauce, To make Bechamel Sauce, melt 2 t butter in a saucepan then add 2 T chopped onions, cooking until onions turn golden.
Stir in 2 T wholewheat flour and 2-1/2 c hot milk.
Stir until smooth.
Add 1/2 t salt, 1/4 t pepper, and a pinch of grated nutmeg.
