Sausage Pizza Supreme

Ingredients
  Green pepper 1 Small, chopped
  Onion 1 Large, chopped
  Garlic 2 Clove (10 gm), minced
  Chopped fresh parsley 3 Tablespoon
  Vegetable oil 1 Tablespoon
  Canned whole tomatoes 28 Ounce, undrained (1 Can)
  Canned tomato paste 6 Ounce (1 Can)
  Dried whole oregano 1 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Pizza crust 2 (12 Inch Thick / Thin)
  Shredded mozzarella cheese 12 Ounce (3 Cups)
  Shredded cheddar cheese 8 Ounce (2 Cups)
  Pork sausage 1 Pound (Bulk)
  Pepperoni 4 Ounce, sliced (1 Package)
  Canned sliced ripe olives 2 Ounce, drained (1 Can)
  Sliced fresh mushrooms 1 1⁄3 Cup (21.33 tbs)
  Sliced green onions 3⁄4 Cup (12 tbs)
  Green peppers 2 Small, sliced into rings
  Grated parmesan cheese 1 Cup (16 tbs)
Directions

Saute first 4 ingredients in hot oil in a Dutch oven until tender; set aside.
Place tomatoes in container of an electric blender or food processor, and process until smooth; add to onion mixture.
Stir in tomato paste, oregano, and pepper.
Bring to a boil; reduce heat, and simmer 1 hour or until sauce is reduced to about 3 1/2 cups, stirring occasionally.
Spread sauce evenly over each pizza crust, leaving a 1/2 inch border around edges.
Combine cheeses; sprinkle 1 1/4 cups cheese mixture over each pizza.
Cook sausage over medium heat until browned, stirring to crumble.
Drain well.
Sprinkle sausage over pizzas.
Layer pepperoni and next 4 ingredients on pizzas, and bake at 450° for 15 minutes.
Sprinkle with remaining shredded cheese, and bake an additional 5 minutes.
Top with Parmesan cheese.
