Pizza Egg Cups
|Salami slices||4 , halved|
|Pizza sauce||1⁄4 Cup (4 tbs)|
|Shredded mozzarella cheese||2 Tablespoon|
|Italian herbs||1⁄4 Teaspoon, dried|
|Fresh oregano/Fresh parsley||1 Teaspoon (For Garnish)|
1. Place 3 half slices of salami around edge of each of 2 (6-ounce) custard cups, forming a scalloped edge at the top. Place another half slice on bottom of each cup.
2. Spoon half the pizza sauce into salami-lined cups. Gently slip 1 egg into each cup. Prick yolks with a pin or wooden pick. Top with remaining pizza sauce. Sprinkle with mozzarella cheese and herbs.
3. Cover each cup with vented plastic wrap. Microwave at 70% (medium high) 3-1/2 to 4 minutes or until eggs are just set. Rearrange cups and give them a half turn after 2 minutes. Let stand, covered, 1 minute. Garnish with oregano or parsley.
