BarleyStuffed Pita Bread
|Ground beef||1 Pound|
|Onion||1 Large, chopped|
|Chopped green pepper||1 Cup (16 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Cooked tomatoes||2 Cup (32 tbs)|
|Chili powder||1 Tablespoon|
|Barley||1 Cup (16 tbs)|
|Water||1 1⁄2 Cup (24 tbs)|
|Shredded lettuce||1⁄2 Cup (8 tbs)|
|Sour cream/Yogurt||1 Tablespoon|
|Shredded cheese||1 Tablespoon|
Brown the ground beef, draining excess fat.
Add the onion, green pepper, and garlic, and saute.
Add the tomatoes, spices, barley, and water.
Simmer 35 minutes or until barley is tender.
Salt and pepper to taste.
Stuff into Pita Bread, adding shredded lettuce, yogurt or sour cream, and cheese.
Note: The amount of chili powder may be varied according to individual preference.
