Perfect Pita Bread

Ingredients
  Warm water 2 Cup (32 tbs) (105 to 115 degrees)
  Dry yeast 1
  Salt 1 Teaspoon
  All purpose flour 4 1⁄2 Cup (72 tbs) (unsifted)
Directions

In a large bowl mix water and yeast.
Add salt.
Add flour gradually, mixing well until smooth.
Scrape side of bowl; cover lightly.
Let rise in a warm place for 1 hour or until doubled in bulk.
Stir dough down.
Dust a board with flour.
On the floured board place the dough.
Divide into 12 portions; cover lightly.
Let rest for 30 minutes.
Dust a baking sheet with flour.
On the prepared baking sheet place 2 portions.
Flatten each portion lightly into 5-inch round, forcing any air bubbles to center of rounds.
Preheat oven to 350 degrees.
Place baking sheet on lowest oven rack.
Bake for 20 minutes or until puffed but not brown.
Repeat with remaining portions.
Preheat broiler.
Broil baked pitas for 1 minute.
