Fruit And Cheese Pitas
|Chopped unpeeled red delicious apple||1 Cup (16 tbs)|
|Chopped unpeeled granny smith apple||1 Cup (16 tbs)|
|Chopped seedless red grape||1⁄2 Cup (8 tbs)|
|Low fat sharp cheddar cheese||1 1⁄3 Ounce, diced (1/3 Cup)|
|Slivered almonds||3 Tablespoon, toasted|
|Plain non fat yogurt||1⁄4 Cup (4 tbs)|
|Frozen apple juice concentrate||1 Tablespoon (Undiluted)|
|Lime juice||1 Tablespoon|
|Reduced calorie mayonnaise||1 Tablespoon|
|Dried tarragon||1⁄4 Teaspoon|
|Pita bread||2 , cut in half (6 Inch)|
Combine apples, grapes, cheese, and almonds in a bowl; toss gently, and set aside.
Combine yogurt, apple juice concentrate, lime juice, mayonnaise, and tarragon in a bowl; stir well.
Pour over apple mixture; toss gently.
Line each pita half with a lettuce leaf.
Spoon 3/4 cup apple mixture into each half.
