Fruit And Cheese Pitas

Ingredients
  Chopped unpeeled red delicious apple 1 Cup (16 tbs)
  Chopped unpeeled granny smith apple 1 Cup (16 tbs)
  Chopped seedless red grape 1⁄2 Cup (8 tbs)
  Low fat sharp cheddar cheese 1 1⁄3 Ounce, diced (1/3 Cup)
  Slivered almonds 3 Tablespoon, toasted
  Plain non fat yogurt 1⁄4 Cup (4 tbs)
  Frozen apple juice concentrate 1 Tablespoon (Undiluted)
  Lime juice 1 Tablespoon
  Reduced calorie mayonnaise 1 Tablespoon
  Dried tarragon 1⁄4 Teaspoon
  Pita bread 2 , cut in half (6 Inch)
  Lettuce leaves 4
Directions

Combine apples, grapes, cheese, and almonds in a bowl; toss gently, and set aside.
Combine yogurt, apple juice concentrate, lime juice, mayonnaise, and tarragon in a bowl; stir well.
Pour over apple mixture; toss gently.
Line each pita half with a lettuce leaf.
Spoon 3/4 cup apple mixture into each half.
