Chicken Pita Pizzas
|Pita breads||2 (7 Inch, Pocket Less)|
|Scallion hummus||6 Tablespoon|
|Bone in roasted chicken breast||1 , skin and bone removed and chicken coarsely shredded|
|Shredded part skim mozzarella cheese||1⁄2 Cup (8 tbs)|
|Pitted green olives||6 Large (Manzanilla / Sicilian)|
1 Preheat the broiler. Place the pita breads on a baking sheet. Broil 4-5 inches from the heat until golden, about 45 seconds on each side.
2 Spread 3 tablespoons of the hummus evenly onto each of the pita breads, almost to the edge. Top each evenly with the chicken, and sprinkle with the cheese, then the olives. Broil the pizzas until the cheese melts, 50-70 seconds.
