Pineapple Nut Cookies
|Shortening||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Egg||1 , beaten|
|Cake flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Pineapple||1⁄2 Cup (8 tbs), crushed|
|Nuts||2⁄3 Cup (10.67 tbs), chopped|
|Lemon juice||1 Tablespoon|
Cream shortening and sugars together, add egg and beat well.
Sift dry ingredients together and add with well drained pineapple, nuts and lemon juice.
Drop from a teaspoon or shape with a cookie press onto a well greased cookie sheet.
Bake 15 to 20 minutes at 375Â°F.
