Spiced Pineapple Sticks
|Whole cloves||1 1⁄2 Teaspoon|
|Unsweetened orange juice||1 Cup (16 tbs)|
Peel and trim eyes from pineapple; remove core.
Cut pineapple lengthwise into 16 sticks.
Place cloves, allspice, cinnamon stick, and orange on a cheesecloth square.
Bring edges together at top, and tie securely to form a bag.
Combine spice bag, orange juice, sugar, and vinegar in a non-aluminum Dutch oven; bring to a boil.
Reduce heat, simmer, uncovered, stirring occasionally, 35 minutes or until pineapple is transparent.
Discard spice bag.
Transfer pineapple and cooking liquid to a large bowl.
Cover and chill 8 hours or overnight.
Drain pineapple, and serve cold.
