Lemon Pineapple Surprise
|Lemon gelatin||1 Tablespoon|
|Crushed pineapple||1 Can (10 oz)|
|Lemon juice||1⁄2 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Chopped pimento||1⁄2 Cup (8 tbs)|
|Grated mild cheese||3⁄4 Cup (12 tbs)|
|Heavy cream||1⁄2 Cup (8 tbs)|
|Mayonnaise||1 Cup (16 tbs)|
Dissolve gelatin in 1 cup boiling water.
Mix pine- apple, lemon juice aid sugar in pan; bring to a boil.
Cook for 3 minutes.
Stir pineapple mixture into gela- tin.
Refrigerate until partially set.
Add pimento, cheese and whipped cream; fold together.
Pour into individual molds or 1 large mold; chill until firm.
Top with mayonnaise and paprika.
