Spiced Pineapple

Ingredients
  Pineapple chunks/Pineapple spears 1 Can (10 oz)
  Vinegar 1 Cup (16 tbs)
  Pineapple juice 1 Cup (16 tbs)
  White sugar 2 1⁄4 Cup (36 tbs)
  Cinnamon stick 1
  Whole cloves 1⁄4 Teaspoon
Directions

GETTING READY
1) Pack the pineapple chunks in a sterilized jar.
2) In a saucepan, mix together vinegar, pineapple juice, sugar, cinnamon and cloves.

MAKING
3) Heat the vinegar mixture to a boil.
4) Reduce the heat and simmer the vinegar mixture for 15 minutes.
5) Remove from the heat and pour over the pineapple chunks..
6) Seal the jar and place in refrigerator overnight.
7) Drain the fruits reserving the liquid.

FIALIZING
8) In a saucepan, bring the liquid to a boil and pour over pineapple.
9) Seal the jar with sterilized lid.
10) Leave aside at least for 2 days before serving to incorporate the spicy flavours.

SERVING
11) Serve as desired.
