|Creme de menthe||1⁄2 Cup (8 tbs) (Small Sized)|
|Sweetened cream||1⁄4 Cup (4 tbs)|
|Green coloring||1 Teaspoon|
|Fresh mint leaves||4|
Cut ripe pineapple into bite sized pieces.
Sprinkle with the juice of fresh lime and Creme de Menthe.
Add extra Creme de Menthe for a stronger mint flavour.
Cover and leave in the refrigerator for at least 1 hour.
Serve in glasses topped with cream which has been tinted with a little green colouring and fresh mint leaves.
