Shrimp Pineapple Outrigger
|Fresh shrimp||1 Pound|
|Seafood seasoning||1 Tablespoon|
|Vinegar||1⁄4 Cup (4 tbs)|
|French dressing||1⁄4 Cup (4 tbs)|
Combine shrimp, seasoning, salt, vinegar and 4 cups water; mix well.
Place in saucepan; bring to a boil.
Simmer, covered, for about 5 minutes or until pink.
Drain; remove shells.
Cut pineapple, including crown, in half.
Remove fruit, leaving shell about 1/4 inch thick.
Dice pineapple; mix with shrimp.
Marinate with enough French dressing to coat.
Spoon shrimp mixture into pineapple shell.
Garnish with fresh flowers.
