Kabob Dinner

Ingredients
  Scallops 1 Pound (Fresh Or Frozen)
  Butter/Margarine 1⁄4 Cup (4 tbs), melted
  Lemon juice 1 Tablespoon
  Paprika 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Canned potatoes 1 Pound, drained (1 Can)
  Soft butter 1 Tablespoon
  Grated parmesan cheese 1 Tablespoon
  Canned pineapple chunks 13 1⁄2 Ounce, drained (1 Can)
  Canned button mushrooms 4 Ounce, drained (1 Can)
  Tomatoes 2 , cut into eights
  Green pepper 1 , cut into 1 inch pieces
Directions

If using frozen scallops, thaw in the refrigerator.
Wash scallops and remove any shell particles.
Mix melted butter with lemon juice, paprika, salt, and pepper.
Dip scallops into butter mixture.
Brush potatoes with soft butter and sprinkle with Parmesan cheese.
On long metal skewers, alternate scallops, potatoes, pineapple chunks, mushrooms, tomato wedges, and green pepper pieces.
Set oven control at "broil." Place kabobs on greased broiler rack and broil 3 to 5" from source of heat 3 to 4 min.; turn and broil 3 to 5 min longer.
Serve with lemon wedges, if desired.
