South Seas Pineapple
|Margarine/Butter||1 Tablespoon, melted|
|Brown sugar||1 Tablespoon, packed|
|Curry powder||1⁄4 Teaspoon|
|Plain yogurt||1⁄2 Cup (8 tbs)|
|Coconut||2 Tablespoon (toasted)|
Cut pineapple crosswise into six 3/4-inch-thick slices.
Stir together margarine or butter, brown sugar, and curry powder.
Grill pineapple slices on an uncovered grill directly over medium coals for 6 to 8 minutes or till heated through, turning once and brushing once or twice with margarine mixture.
To serve, cut slices in half .Serve warm topped with yogurt and coconut.
