Pineapple Rice Drops

Ingredients
  Shortening 2⁄3 Cup (10.67 tbs)
  White sugar 1 Cup (16 tbs)
  Egg 1
  Almond extract 2 Drop
  Vanilla 1 Teaspoon
  Grated lemon rind/Orange rind 1 Teaspoon
  Canned crushed pineapple 14 Ounce, drained (1 Can)
  Chopped nuts/Candied cherries 1⁄2 Cup (8 tbs)
  Unsifted pastry flour/1 1/2 cups all-purpose flour 1 3⁄4 Cup (28 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
  Crisp rice cereal 1 Cup (16 tbs)
Directions

Beat the first five ingredients together.
Stir in rind, pineapple and nuts.
Add dry ingredients sifted together.
Drop heaping teaspoonfuls into rice cereal.
Turn to coat and press cereal in lightly.
Arrange on oiled cooky sheets 1 inch apart.
Press centres with a wet little finger and drop in a dab of yellow or red jam.
Bake at 350F for 12 to 14 minutes
