Pineapple Rice Drops
|Shortening||2⁄3 Cup (10.67 tbs)|
|White sugar||1 Cup (16 tbs)|
|Almond extract||2 Drop|
|Grated lemon rind/Orange rind||1 Teaspoon|
|Canned crushed pineapple||14 Ounce, drained (1 Can)|
|Chopped nuts/Candied cherries||1⁄2 Cup (8 tbs)|
|Unsifted pastry flour/1 1/2 cups all-purpose flour||1 3⁄4 Cup (28 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1⁄4 Teaspoon|
|Crisp rice cereal||1 Cup (16 tbs)|
Beat the first five ingredients together.
Stir in rind, pineapple and nuts.
Add dry ingredients sifted together.
Drop heaping teaspoonfuls into rice cereal.
Turn to coat and press cereal in lightly.
Arrange on oiled cooky sheets 1 inch apart.
Press centres with a wet little finger and drop in a dab of yellow or red jam.
Bake at 350F for 12 to 14 minutes
