Pineapple Refrigerator Dessert

Ingredients
  Unflavored gelatin 1 Tablespoon (1 Envelope)
  Canned crushed pineapple 20 Ounce, drained (1 Can)
  Chilled whipping cream 2 Cup (32 tbs), whipped
  Graham crackers 40
  Finely chopped crystallized ginger 1⁄2 Cup (8 tbs)
Directions

1. Soften gelatin in reserved pineapple syrup in a saucepan. Stir over low heat until gelatin is dissolved. Blend into crushed pineapple. Chill until mixture is slightly thickened, stirring occasionally.
2. Fold half of the whipped cream into chilled gelatin mixture until evenly blended.
3. Spread a thin layer of the gelatin mixture on each graham cracker; turn crackers on end and press together to form a loaf.
4. Spread with remaining whipped cream; garnish with ginger. Chill about 3 hours.
