Pineapple Wiki Wiki Dessert

Ingredients
  Canned unsweetened pineapple juice 2 Cup (32 tbs)
  Lemon juice 2 Tablespoon
  Sugar 1 1⁄2 Cup (24 tbs)
  Salt 1 Teaspoon
  Unflavored gelatin 2 Tablespoon
  Cold water 1⁄2 Cup (8 tbs)
  Egg yolks 6 , well beaten
  Egg whites 6 , stiffly beaten
  Heavy cream 1 Cup (16 tbs), whipped
  Ladyfingers 3 Dozen
Directions

Combine pineapple juice, lemon juice, sugar, and salt in a saucepan.
Heat, stirring occasionally, until sugar is dissolved.
Remove from heat.
Soften gelatin in cold water and dissolve into hot mixture.
Gradually stir into the egg yolks.
Chill until partially set.
Fold in egg whites and whipped cream.
Line bottom and sides of a well oiled 9-inch spring form pan with lady-fingers.
Pour in the filling and chill until firm.
Garnish with additional whipped cream and well drained crushed pineapple if desired
