Fruited Rice Pilaf

Ingredients
  Apple juice 1⁄2 Cup (8 tbs)
  Brown rice 1 Cup (16 tbs)
  Butter/Margarine 1 Tablespoon
  Honey 1 Tablespoon
  Apples 2 Medium, chopped
  Sliced celery 3⁄4 Cup (12 tbs)
  Celery leaves 4
Directions

Combine the apple juice and enough water to equal the amount of liquid called for on rice package directions.
In a medium saucepan bring liquid to boiling.
Stir in rice, butter or margarine, and 1/2 teaspoon salt.
Reduce heat.
Cover tightly and cook over low heat for 30 to 35 minutes or till most of the liquid is absorbed.
Stir in the honey, chopped apples, and celery.
Cover and cook for 10 to 15 minutes more or till all of the liquid is absorbed and rice is tender.
