|Onion||1 Large, quartered|
|Green pepper||1 Large, chopped|
|Tomatoes||3 , chopped|
|Chicken broth||1 Cup (16 tbs)|
|Diced cooked chicken||2 Cup (32 tbs)|
|Cooked bacon||6 , broken|
Place rice, celery, onion, green pepper, tomatoes, and chicken broth into cooker.
Close cover and put pressure control in place.
When pressure is reached and control jiggles gently, remove cooker from flame.
Allow pressure to reduce normally.
Return open cooker to low flame.
Add chicken and bacon.
Simmer for 3 minutes, stirring to mix the flavors.
Serve chicken hot.
