Curried Rice Pilaf with Dried Apricots
|Onion||1⁄4 Cup (4 tbs), finely chopped|
|Black pepper||1⁄4 Teaspoon|
|Garlic||1 Clove (5 gm), finely chopped|
|Curry powder||2 Teaspoon|
|Skim milk||1⁄4 Cup (4 tbs)|
|Chopped dried apricots||2 Tablespoon|
|Uncooked long grain white rice||1 Cup (16 tbs)|
|Water/Nonfat chicken broth / vegetable broth||2 Cup (32 tbs)|
Place the onion, garlic, and milk in a large microwave-safe bowl.
Cover and microwave on high for 3 minutes.
Add the rice, water or broth, pepper, curry powder, apricots, and raisins.
Cover and microwave on high for 18 minutes or until all the liquid is absorbed.
