|Pearl barley||1⁄2 Cup (8 tbs)|
|Chopped chives||1⁄4 Cup (4 tbs)|
In 4-cup (1 L) glass measure, combine mushrooms, onion and butter; cover with vented plastic wrap and microwave at High for 1 minute.
Add chicken stock and barley; microwave at High for 6 to 8 minutes or until barley is almost tender and most of the liquid is absorbed, stirring once.
Add chives; cover and let stand for 10 minutes.
Season with salt and pepper to taste.
