Curried Three Grain Pilaf
|Water||2 Cup (32 tbs)|
|Curry powder||1 Teaspoon|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Chopped sweet red pepper||1⁄2 Cup (8 tbs)|
|Brown rice||1⁄4 Cup (4 tbs), uncooked|
|Bulgur||1⁄4 Cup (4 tbs), uncooked|
|Pearl barley||1⁄4 Cup (4 tbs), uncooked|
|Chopped parsley||1⁄4 Cup (4 tbs)|
Combine first 4 ingredients in a medium saucepan; bring to a boil.
Stir in onion, celery, pepper, and grains.
Cover, reduce heat, and simmer 1 hour or until grains are tender and liquid is absorbed.
Remove rice mixture from heat.
Remove and discard bay leaf.
Add chopped parsley, stirring well to combine.
