Best Rice Pilaf With Chicken
|Long grain rice||1 Cup (16 tbs)|
|Onion||1⁄4 Cup (4 tbs), finely chopped|
|Celery||1⁄4 Cup (4 tbs), finely chopped|
|Chicken broth||2 1⁄4 Cup (36 tbs)|
|Bay leaf||1 Small|
|Thyme||1⁄8 Teaspoon, ground|
1. Combine rice and butter in a 2-quart glass casserole Microwave, uncovered, at Cook Cycle 1 (power level 10) for 4 to 5 minutes, or until rice has begun to brown, stirring every minute. Add onion and celery. Microwave, uncovered, at Cook Cycle 2 (power level 10) for 2 1/2 to 4 minutes longer, or until vegetables are softened.
2. Stir all remaining ingredients. Cover. Set microwave oven at Cook Cycle 1 (power level 10) for 6 minutes, and then Cook Cycle 2 (power level 4) for 15 to 17 minutes. Stir twice during cooking. Let rice stand, covered, 5 minutes before serving.
