Vegetable Pilaf

Ingredients
  Polyunsaturated vegetable oil 2 Teaspoon
  Red onions 2 , sliced
  Garlic 1 Clove (5 gm), crushed
  Broccoli 10 Ounce, cut into florets (315 Gram)
  Cauliflower 10 Ounce, cut into florets (315 Gram)
  Patty pan 8 Ounce, sliced (250 Grams)
  Button mushrooms 6 Ounce, cut into quarters (185 Grams)
  Red pepper 1 , chopped
  Brown rice 14 Ounce, cooked (440 Grams Or 2 Cups)
Directions

1. Heat oil in a frying pan over a medium heat, add onions and garlic and cook for 3 minutes or until onion is soft. Add broccoli, cauliflower, squash, mushrooms and red pepper and cook for 4-5 minutes or until vegetables are tender crisp.
2. Stir in rice and cook for 5 minutes longer or until rice is heated through.
