Rock Cornish Game Hen With Pilaf
|Cornish game hen||1 , cut in half plus giblets if desired|
|Uncooked rice||1⁄2 Cup (8 tbs)|
|Canned mushrooms||4 Ounce, undrained (1 Can)|
|Peas||1 Cup (16 tbs) (Fresh Or Frozen)|
|Chicken broth/3/4 cup chicken broth and 1/2 cup light cream||1 1⁄4 Cup (20 tbs)|
|Red wine||3 Tablespoon|
Saute game hen in butter until lightly browned (cook cut side first, then skin side); set aside.
Add to butter the rice, mushrooms and liquid, peas, broth, and salt.
Pour into casserole and place hen halves on top.
Cover and bake in a moderate oven (350°) for 30 to 40 minutes or until rice is cooked.
Pour red wine over all and serve.
