Rock Cornish Game Hen With Pilaf

Ingredients
  Cornish game hen 1 , cut in half plus giblets if desired
  Butter/Margarine 4 Tablespoon
  Uncooked rice 1⁄2 Cup (8 tbs)
  Canned mushrooms 4 Ounce, undrained (1 Can)
  Peas 1 Cup (16 tbs) (Fresh Or Frozen)
  Chicken broth/3/4 cup chicken broth and 1/2 cup light cream 1 1⁄4 Cup (20 tbs)
  Salt 1⁄2 Teaspoon
  Red wine 3 Tablespoon
Directions

Saute game hen in butter until lightly browned (cook cut side first, then skin side); set aside.
Add to butter the rice, mushrooms and liquid, peas, broth, and salt.
Pour into casserole and place hen halves on top.
Cover and bake in a moderate oven (350°) for 30 to 40 minutes or until rice is cooked.
Pour red wine over all and serve.
Makes 2 servings.
