Barley Rice Pilaf

|Quick cooking barley||1⁄3 Cup (5.33 tbs)|
|Brown rice||1⁄4 Cup (4 tbs) (uncooked)|
|Hot water||1 2⁄3 Cup (26.67 tbs)|
|Mushrooms||1 Cup (16 tbs), sliced (fresh)|
|Carrot||1⁄4 Cup (4 tbs) (1/4-inch cubes)|
|Parsley||2 Tablespoon, snipped (fresh)|
|Garlic||1 Clove (5 gm), minced|
|Lemon juice||1 Teaspoon|
|Thyme leaves||1⁄2 Teaspoon, dried|
In 2-quart casserole, combine all ingredients.
Microwave at High for 5 minutes.
Reduce power to 50% (Medium).
Microwave for 35 to 45 minutes longer, or until liquid is absorbed and rice is tender.
Let stand, covered, for 5 minutes.
