Barley Rice Pilaf

Ingredients
  Quick cooking barley 1⁄3 Cup (5.33 tbs)
  Brown rice 1⁄4 Cup (4 tbs) (uncooked)
  Hot water 1 2⁄3 Cup (26.67 tbs)
  Mushrooms 1 Cup (16 tbs), sliced (fresh)
  Carrot 1⁄4 Cup (4 tbs) (1/4-inch cubes)
  Parsley 2 Tablespoon, snipped (fresh)
  Garlic 1 Clove (5 gm), minced
  Lemon juice 1 Teaspoon
  Thyme leaves 1⁄2 Teaspoon, dried
Directions

In 2-quart casserole, combine all ingredients.
Mix well.
Cover.
Microwave at High for 5 minutes.
Reduce power to 50% (Medium).
Microwave for 35 to 45 minutes longer, or until liquid is absorbed and rice is tender.
Let stand, covered, for 5 minutes.
